Wash and dry all produce. Thinly slice the scallions. Finely chop the garlic. Peel and mince or grate the ginger.

Toss the @beef sirloin tips{1%lb} in a #large bowl{} with the @cornstarch{1%tbsp}. Season generously with @salt{1%tsp} and @black pepper{1%tsp}. Heat a large drizzle of @olive oil{2%tbsp} in a #large nonstick pan{} over high heat. Add the beef and cook ~{1-2%minutes} per side, until browned and cooked to desired doneness. Remove from the pan and set aside.

Bring a #large pot{} of salted @water{1%cup} to a boil. Add the @broccoli florets{1%cup} and cook ~{3-4%minutes}, until bright and crisp-tender. Drain and rinse under cold water.

Heat a large drizzle of olive oil in the same pan over medium heat. Add the garlic, ginger, and scallions. Cook ~{1%minute}, until fragrant. Add the @yakisoba noodles{8%oz} and a drizzle of oil. Break up the noodles until no longer clumpy. Add the remaining water, cover, and steam ~{3%minutes}. Uncover and increase heat to medium-high. Toss ~{3-4%minutes}, until noodles are tender.

Add the @ketchup{2%tbsp}, @soy sauce{4%tbsp}, @hoisin sauce{3%tbsp}, and 2 tbsp water to the pan. Toss ~{1%minute}, until the sauce is combined and thickened.

Toss the broccoli and beef into the noodles. Cook ~{1-2%minutes} until warmed through. Taste and season with salt and pepper. Serve immediately.
