@sugar{¼%tsp}
@salt{1%tsp}
@black pepper{1%tsp}

Wash and dry all produce.

In a small microwave-safe #bowl{}, combine @shallot{1%unit}(thinly sliced), @white wine vinegar{2%tbsp}, @sugar{¼%tsp}, and a pinch of @salt{1%tsp}. Cover with plastic wrap and microwave until shallot is bright pink ~{30%seconds} to ~{60%seconds}. Set aside to pickle, stirring occasionally.

Heat a drizzle of @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Add @ground beef{10%oz}. Cook, breaking up meat into pieces, until cooked through ~{4%minutes} to ~{6%minutes}. If there's excess grease in your pan, carefully pour it out.

Gently crush @blue corn tortilla chips{1%cup} in their bag. Serve the cooked beef nestled in @baby lettuce{1%cup} leaves. Top with @sour cream{2%tbsp}, pickled shallot, crushed chips, and a dash of @black pepper{1%tsp}. Stir in @Tex-Mex Paste{1%unit} with the beef during cooking for extra flavor if desired.
