Place @wide rice noodles{8%oz} in a #large bowl{} and cover with very hot tap water. Let soak until al dente ~{20%minutes} [- TIP: Toss noodles occasionally to prevent sticking. -]. Drain and set aside.

Wash and dry all produce. Thinly slice @scallions{2%stalks}, keeping greens and whites separate. Thinly slice @mini bell peppers{8%oz} into rounds, discarding stems and seeds. Slice @lime{1%unit} into wedges.

Heat a drizzle of @vegetable oil{2%tbsp} in a #large pan{} over high heat. Add @ground pork{12%oz} and season with @salt{1%tsp}, @black pepper{1%tsp}, and @thai seasoning blend{1%unit}. Break pork into pieces with a spatula. Cook, tossing, until browned and cooked through ~{5%minutes}. Remove from pan and set aside.

Heat a large drizzle of vegetable oil in same pan. Add scallion whites, mini bell peppers, and @shredded red cabbage{2%cups}. Season with salt and pepper. Cook until softened and lightly browned ~{4%minutes}.

Add ½ cup water, @soy sauce{2%tbsp}, and @pork ramen stock concentrate{1%unit} to pan. Bring to a simmer. Return pork to pan, along with rice noodles. Toss to combine and warm through. Season to taste with salt and pepper.

Divide noodle mixture between plates. Drizzle with @sesame oil{1%tbsp}. Sprinkle with scallion greens and @peanuts{2%tbsp}. Serve with lime wedges on the side for squeezing.
