Wash and dry produce. Halve, peel, and finely dice @onion{1%unit}. Peel and mince @garlic{2%cloves}. Trim and quarter @zucchini{1%unit} lengthwise, then cut crosswise into ½-inch-thick pieces. Drain @cannellini beans{1%unit}. Pick thyme leaves from stems; mince until you have @thyme{1%tsp}. Roughly chop @parsley{¼%cup}.

Heat @cooking oil{2%tbsp} and @olive oil{1%tbsp} in a #large pot{} over medium-high heat. Add onion; cook, stirring occasionally, until softened ~{5%minutes}. Add garlic; cook until fragrant ~{30%seconds}. Stir zucchini, beans, minced thyme, @tomato paste{2%tbsp}, @mushroom stock concentrate{1%unit}, @water{3½%cups}, and a big pinch of @salt{1%tsp} and @black pepper{1%tsp} into pot. Bring to a boil, then reduce to a low simmer; cook, uncovered, until zucchini is just softened ~{6%minutes}.

Stir @Israeli couscous{¾%cup} into pot. Cover and cook until couscous is tender ~{7%minutes}. Taste and season generously with salt and pepper.

Divide soup between bowls. Top with @crème fraîche{2%tbsp}. Garnish with chopped parsley and serve.
