Line a #baking sheet{} with foil and place in the oven; preheat to 425°F. Wash and dry all produce. Trim and thinly slice @cremini mushrooms{8%oz}. Halve, peel, and thinly slice @shallots{2%whole}. Cut @lemon{1%whole} into wedges.

Heat a large drizzle of @olive oil{2%tbsp} in a #large pan{} over medium-high heat. Add the cremini mushrooms, shallots, and half the @italian seasoning{1%tsp}. Cook, stirring, until browned and softened ~{10%minutes}. Season with salt and pepper.

Remove the preheated baking sheet from the oven and place @flatbreads{2%pieces} on it. Top with @italian cheese blend{½%cup}, the remaining italian seasoning, and the mushroom mixture. Season with salt and pepper.

Bake until the cheese is melted and the crust is golden ~{7%minutes}. Remove from the oven, then drizzle with @truffle oil{1%tbsp} to taste. Start with a few drops and add more as desired.

In a #medium bowl{}, toss @arugula{3%cups} with a drizzle of olive oil and a squeeze of lemon juice to taste. Season with salt and pepper.

Cut the flatbreads into slices. Serve with the salad on the side. You can also top the flatbreads with the salad if preferred.
