Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce. Toss @potatoes{16%oz} with @cooking oil{1%tbsp}, @dried oregano{1%tsp}, @salt{½%tsp}, and @black pepper{¼%tsp}. Spread on a #baking sheet{} and roast until crispy and golden ~{15-20%minutes}.

Meanwhile, rinse @jasmine rice{1%cup}. In a #small pot{}, bring water to a boil, add rice, cover, reduce heat to low, and cook until tender ~{15%minutes}. Keep covered off heat until ready to serve.

Meanwhile, in a #small bowl{}, combine @chimichurri{2%tbsp} and @mayonnaise{2%tbsp}. Stir until smooth. Set aside.

Heat a drizzle of cooking oil in a #large pan{} over medium heat. Add @red onion{1%unit} wedges; cook, stirring occasionally, until lightly browned and slightly tender ~{4-6%minutes}. Add @tomato paste{2%tbsp} and cook until brick red in color ~{30-60%seconds}.

Add @ground turkey{10%oz}, breaking it up with a spoon. Cook until browned and no longer pink ~{5-7%minutes}. Stir in @soy sauce{2%tbsp}, @sherry vinegar{1%tbsp}, @cumin{1%tsp}, @sugar{1%tsp}, and remaining salt and pepper. Simmer until sauce thickens ~{3-5%minutes}. Stir in @sriracha{1%tsp} if desired.

Fluff rice with a fork; stir in @butter{2%tbsp}. Divide rice and roasted potatoes between plates. Top with turkey mixture, drizzle with chimichurri mayo, and finish with extra sriracha to taste.
