Wash and dry all produce. Peel and mince the @garlic{3%cloves}.

Heat a drizzle of @cooking oil{1%tbsp} in a #small pot{} over medium-high heat. Add half the minced garlic and half the @turmeric{½%tsp}. Cook, stirring constantly, until fragrant ~{30%seconds}.

Add @jasmine rice{½%cup}, @veggie stock concentrate{1%unit}, 1¼ cups water, and a pinch of @salt{1%tsp}. Bring to a boil, then cover and reduce to a low simmer. Cook until tender ~{15%minutes}. Keep covered off heat until ready to serve.

While rice cooks, mince the @parsley{¼%cup}. Roughly chop the @pistachios{2%tbsp}. Trim and discard woody bottom ends from the @asparagus{10%oz}; cut crosswise into 1-inch pieces. Halve, peel, and thinly slice half the @red onion{1%medium}.

In a #small bowl{}, combine parsley, pistachios, @garlic powder{½%tsp}, 2½ tbsp @olive oil{3%tbsp}, 1 tsp @red wine vinegar{1%tsp}, salt, and @black pepper{½%tsp} to make the chimichurri. Add a little more vinegar if you prefer a tangier sauce.

Heat a drizzle of oil in a #large pan{} over medium-high heat. Add asparagus and sliced onion; season with salt and pepper. Cook, stirring, until lightly browned and tender ~{3%minutes}.

In the last minute of cooking, stir in @peas{1½%cup} and remaining minced garlic. Cook, stirring occasionally, until garlic is fragrant and peas are warmed through ~{1%minute}.

Fluff rice with a fork; stir in @golden raisins{1%tbsp}.

Divide rice between shallow bowls and top with veggies. Drizzle chimichurri over top and serve.
