@coconut milk{13.5%oz}
@veggie stock concentrate{1%unit}
@sugar{½%tsp}
@cauliflower rice{10%oz}

In a #small pot{}, combine @basmati rice{1%cup}, @water{¾%cup}, and a pinch of @salt{}. Bring to a boil; cover and reduce heat to low. Cook until rice is tender ~{15%minutes}. Keep covered off heat until ready to serve.

Wash and dry all produce.
Trim and halve @green beans{6%oz} crosswise. Halve, peel, and thinly slice @onion{1%unit}. Peel and mince @ginger{1%tsp}. Peel and mince @garlic{2%cloves}. Roughly chop @cilantro{½%cup}.

Heat a drizzle of @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Add green beans, onion, a pinch of salt, and @black pepper{¼%tsp}. Cook, stirring occasionally, until veggies are softened ~{4%minutes}.
Stir in minced ginger, garlic, @curry powder{1%tsp}, and half the @garam masala{½%tsp}. Cook, stirring, until fragrant ~{1%minute}.
Stir in @chickpeas{15%oz} and their liquid, @coconut milk{13.5%oz}, @veggie stock concentrate{1%unit}, and @sugar{½%tsp}. Bring to a simmer, then reduce heat to low; cook, stirring occasionally, until thickened ~{4%minutes}. If curry seems too thick, stir in a splash of water. Taste and season with salt and pepper if desired.

Fluff rice with a fork.
Divide rice and curry between bowls; garnish with cilantro. Serve over basmati rice or @cauliflower rice{10%oz}.
