Wash and dry all produce. Press @tofu{14%oz} to remove excess moisture, then cut into ½ inch cubes.

In a #medium bowl{}, toss tofu with @cornstarch{2%tbsp}, @salt{½%tsp}, and @black pepper{¼%tsp} until evenly coated.

Meanwhile, in a #large bowl{}, whisk together @vegan mayonnaise{3%tbsp}, @rice wine vinegar{1%tbsp}, 1½ tbsp @plum sauce{1½%tbsp}, a pinch of salt, and black pepper until smooth.

Heat @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Add tofu in a single layer and cook until crispy on all sides ~{8%minutes}. Stir in @hoisin sauce{2%tbsp} and remaining plum sauce until tofu is evenly glazed.

In the large bowl, combine @shredded carrots{1%cup}, @shredded red cabbage{1%cup}, sliced @radishes{1%cup}, and @edamame{1%cup}. Toss with the creamy plum dressing until fully coated.

Separate @baby lettuce{1%head} leaves and arrange on plates. Fill each leaf with saucy tofu and as much edamame slaw as desired. Drizzle with any remaining plum sauce, garnish with @crispy fried onions{¼%cup}, and serve immediately.
