Wash and dry produce. Trim and thinly slice @scallions{2%stalks}, separating whites from greens. Peel and mince or grate @ginger{½%tsp}. Trim and slice @zucchini{1%medium} crosswise into ½-inch-thick rounds. Drain and rinse @chickpeas{1%can}. Quarter @lime{1%unit}.

In a #small pot{}, combine @jasmine rice{½%cup}, 1¼ cups water, and a pinch of @salt{1%pinch}. Bring to a boil, then cover and reduce to a low simmer. Cook, covered, until rice is tender ~{15%minutes}. Keep covered off heat until ready to serve.

While rice cooks, heat a drizzle of @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Add scallion whites and minced ginger; cook, stirring, until fragrant ~{30%seconds}. Add zucchini, @red cabbage and carrot mix{1%package}, chickpeas, @veggie stock concentrate{1%unit}, @mushroom stock concentrate{1%unit}, @garlic powder{½%tsp}, ¼ tsp @sugar{¼%tsp}, and a big pinch of salt and @black pepper{1%pinch}. Cook, stirring, until cabbage is slightly wilted ~{3%minutes}. Add @coconut milk{1%can} and ¼ cup water; cook, stirring, until slightly thickened ~{2%minutes}. Remove from heat and stir in @green curry paste{2%tbsp}.

Fluff rice with a fork. Divide rice between bowls; top with curry. Garnish with scallion greens and a squeeze of lime juice. Serve with remaining lime wedges on the side.
