Wash and dry all produce. Remove the @udon noodles{12%oz} from the refrigerator to come to room temperature. Trim the ends of the @green beans{8%oz}, then cut into 1-inch pieces. Peel and mince the @ginger{1%tbsp}. Mince or grate the @garlic{3%cloves}. Peel the @carrots{2%unit}. Cut in half lengthwise, then slice into thin half moons. Thinly slice the @scallions{2%unit}, keeping the greens and whites separate. Thinly slice the @button mushrooms{8%oz}.

Heat a drizzle of @olive oil{2%tbsp} in a #large pan{} over medium-high heat. Add the @button mushrooms{8%oz}, @carrots{2%unit}, and @green beans{8%oz}. Cook, tossing, until softened and slightly golden brown ~{5%minutes}. Add the @ginger{1%tbsp}, scallion whites, @garlic{3%cloves}, and another drizzle of @olive oil{2%tbsp} if needed. Cook, tossing, until fragrant ~{1%minute}. Season with @salt{1%tsp} and @pepper{1%tsp}.

In a #small bowl{}, combine the @soy sauce{2%tbsp}, @veggie stock concentrate{1%unit}, @hoisin sauce{2%tbsp}, @honey{1%tsp}, and ¼ cup water. Stir to combine.

Add the sauce to the #large pan{} and reduce until thickened ~{1%minute}. Add the @udon noodles{12%oz} to the pan and cook, tossing, until tender ~{3%minutes}. If the pan becomes too dry, add a splash of water or drizzle of @olive oil{2%tbsp}. Season with @salt{1%tsp} and @pepper{1%tsp}.

Divide the veggie lo mein between bowls and garnish with the scallion greens and @cashew pieces{¼%cup}. Enjoy!
