Preheat oven to 450°F. Wash and dry all produce.

Peel @onion{1%unit}(cut into ¼-inch-thick rounds). Halve @brioche buns{2%units}.

Heat @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Add onion and cook until tender and browned at the edges ~{2%minutes} per side. Season with @salt{1%tsp} and @black pepper{½%tsp}.

Form @ground beef{1%lb} into two patties, each slightly wider than a bun. Don’t worry if your patties aren’t perfectly round, as those irregular edges will turn deliciously crispy. Season generously with salt and pepper.

Cook patties in the #large pan{} until browned and cooked to desired doneness ~{4%minutes} per side. While patties cook, toast buns until golden brown. Spread as much @smoky mustard{2%tbsp} as you like onto cut sides.

Cut @potatoes{1%lb} into wedges, toss with oil, salt, and pepper, and roast on a #baking sheet{} until crispy and tender ~{15%minutes}. Fill buns with griddled onion, patties, @white cheddar cheese{8%slices}, and @crispy fried onions{2%tbsp}. Serve with roasted potatoes on the side.
