2Adjust rack to top position and preheat oven to 450°F. Wash and dry produce. Slice potatoes into ½-inch-thick wedges. Toss on a baking sheet with a drizzle of cooking oil, salt, and pepper. Roast on top rack until lightly browned and tender ⏱️ 20 minutes . -
3Meanwhile, peel and cut yellow onion into ¼-inch-thick rounds, keeping layers intact. Halve brioche buns. -
4Heat a drizzle of cooking oil in a large pan over medium-high heat. Add onion rounds and cook until tender and browned at the edges ⏱️ 2 minutes per side. Season with salt and pepper. Turn off heat and transfer to a plate. Wipe out pan. -
5Form ground beef into two patties, each slightly wider than a bun. Season generously with salt and pepper. Heat a drizzle of cooking oil in the same large pan over medium-high heat. Add patties and cook to desired doneness ⏱️ 3 minutes per side. In the last ⏱️ 1 minutes , top patties with white cheddar cheese and cover pan to melt. -
6While patties cook, toast brioche buns cut-side down in the pan or a separate skillet until golden brown. Spread as much smoky mustard on cut sides of buns as you like. -
7Fill buns with griddled onion, patties, and crispy fried onions. Divide burgers between plates and serve with potato wedges on the side.
