Adjust rack to top position and preheat oven to 450°F. Bring a #medium pot{} of salted water to a boil. Wash and dry all produce.

Add penne pasta to boiling water. Cook, stirring occasionally, until almost al dente ~{8%minutes}. Drain and set aside.

Meanwhile, heat a drizzle of olive oil in a #large pan{} over medium-high heat. Add diced onion, halved grape tomatoes, and a pinch of salt. Cook, stirring occasionally, until onion is softened ~{5%minutes}. Stir in tomato paste, veggie stock concentrate, marinara sauce, chili flakes, and sugar. Simmer until thickened.

While sauce simmers, in a #medium bowl{}, combine ricotta cheese, italian seasoning, and a drizzle of remaining olive oil. Season with salt and black pepper.

Add drained pasta, sauce mixture, and 1 tbsp butter to the pasta pot. Season with salt and black pepper; stir to thoroughly combine. Fold in sliced zucchini.

Transfer mixture to a #baking dish{}. Top with remaining ricotta cheese and mozzarella cheese. Cover with aluminum foil. Bake on top rack ~{10%minutes}. Remove from oven, discard foil, and bake until cheese is melted ~{5%minutes}. Serve immediately.
