  • chili flakes

  • fig jam

  • monterey jack cheese

  • olive oil

  • onion

    Preheat oven to 425 degrees. Wash and dry all produce.

    In a large pan, cook bacon over medium-high heat until crispy. Transfer to a paper towel-lined plate and drain.

    Halve, peel, and thinly slice onion .

    Add onion to the same pan with the reserved bacon fat (if the pan seems dry, add a drizzle of olive oil ). Season with salt and black pepper ; cook, stirring occasionally, until browned and softened ⏱️ 3 minutes . Turn off heat.

    While onion cooks, brush or rub each flatbread with remaining olive oil; season with salt and pepper. Place flatbreads (dimpled sides down) on a baking sheet .

    Bake flatbreads until lightly toasted ⏱️ 3 minutes . Flip (dimpled sides up) and top evenly with mozzarella cheese , onion, bacon, and monterey jack cheese .

    Bake again until cheese is melted and bubbly ⏱️ 3 minutes . Transfer flatbreads to a cutting board; drizzle with as much fig jam as you like. Sprinkle with chili flakes and serve.
