    Bring a medium pot of salted water to a boil.

    Add lo mein noodles to pot. Cook, stirring occasionally, until al dente ⏱️ 5 minutes . Drain and set aside.

    Wash and dry all produce.

    Heat a drizzle of cooking oil in a large pan over medium-high heat. Add organic chicken cutlets and cook, stirring occasionally, until a crust forms ⏱️ 4 minutes . Turn off heat; transfer to a plate. Wipe out pan.

    Heat another drizzle of oil in pan over medium heat. Add tomato (diced), green bell pepper (sliced), red onion (sliced), and scallions (whites); cook, stirring occasionally, until browned and tender ⏱️ 4 minutes .

    In a small bowl , whisk soy sauce , sweet soy glaze , ketchup , chicken stock concentrate , sriracha , cornstarch , garlic powder , and a splash of water until smooth. Return chicken to pan with vegetables. Pour sauce over and toss until thickened and everything is coated ⏱️ 2 minutes . Season to taste with salt and black pepper .

    Divide noodles between plates and top with chicken and vegetable mixture. Garnish with scallion greens. Serve.
