    Adjust oven rack to top position and preheat oven to 425°F. Wash and dry all produce.

    Heat cooking oil in a medium pan over medium heat. Add shallot , fingerling potatoes , and carrot ; season with half the old bay seasoning , salt , and black pepper . Cook until vegetables begin to soften ⏱️ 5 minutes .

    Add 2 TBSP butter to pan with vegetables. Once melted, stir in flour ; cook for ⏱️ 1 minutes to form a roux.

    Place 1 TBSP butter in a small bowl ; microwave until melted ⏱️ 30 seconds . Stir in ¼ tsp old bay seasoning to create spiced butter.

    Pour seafood stock concentrate dissolved in water into the pan, scraping up any browned bits. Stir in cream cheese until completely melted and smooth. Add lobster tails and simmer until sauce thickens ⏱️ 3 minutes . Cut buttermilk biscuits into quarters and arrange evenly over the filling. Brush tops generously with the spiced butter. Bake until biscuits are golden brown and filling is bubbly ⏱️ 12 minutes .

    While the pie bakes, whisk olive oil , honey , dijon mustard , juice from 1 lemon wedge, and a pinch of salt and black pepper in a large bowl . Toss with mixed greens until coated. Top with sliced almonds .
