    Wash and dry all produce. Quarter lime .

    Open package of diced skinless dark meat chicken and drain off any excess liquid. In a large bowl , toss chicken with half the garlic-ginger scallion paste , salt , and black pepper .

    Heat cooking oil in a large pan over medium-high heat. Cook chicken until golden brown and cooked through ⏱️ 5 minutes . Transfer to a plate.

    While chicken rests, in a small bowl with reserved garlic-ginger scallion paste, add juice from half lime, 1 tbsp soy sauce , 1 tbsp mandarin juice, ½ tsp sesame oil , ½ tsp sugar , salt, pepper, and sriracha . Whisk in olive oil until thick and creamy.

    In the large bowl , toss coleslaw mix and mixed greens with dressing until evenly coated.
