2Adjust oven rack to top position and preheat oven to 450°F. Wash and dry all produce. -
3Meanwhile, trim and thinly slice scallions, separating whites from greens. Zest and quarter lime. Thinly slice tomato into rounds. -
4In a small bowl , combine ketchup and half the mayonnaise. Set aside. -
5In a large bowl , combine ground beef, scallion whites, garlic powder, half the cumin, half the oregano, remaining fry seasoning, and juice from one lime wedge. Form into two patties, each slightly wider than a bun. -
6Toss sweet potatoes with cooking oil and season with salt and black pepper. Spread on a baking sheet and bake until tender and lightly crisp ⏱️ 20 minutes . Once sweet potatoes are done, remove sheet from oven and carefully toss with as much lime zest as you like. Taste and season with additional salt if needed. -
7Combine coleslaw mix with remaining mayonnaise, sugar, and a squeeze of lime juice. Toss until evenly coated.

8Spread bottom potato buns with a thin layer of mayo-ketchup sauce. Fill buns with patties, tomato, and as many crispy fried onions as you like. Serve with slaw and sweet potatoes on the side.
