    Preheat oven to 425°F. Wash and dry all produce. Thinly slice dill pickle to yield 1 tbsp. Finely grate 1 clove garlic . Halve and peel red onion ; thinly slice half and grate the other half to yield 2 tbsp. Slice tomato .

    Cut sweet potatoes into 3-inch pieces. Toss on a baking sheet with olive oil , 1 tbsp fry seasoning , salt , and black pepper . Roast in the oven until tender and browned ⏱️ 20 minutes .

    In a small bowl , combine lime , lime juice, mayonnaise , sour cream , minced dill pickle, ½ tsp sugar , and sriracha . Stir well, season with salt , and set aside.

    In a large bowl , mix ground beef , grated garlic, grated onion, remaining fry seasoning, salt , and black pepper . Divide mixture into 8 portions and shape each into a 3-inch patty.

    Heat olive oil in a large skillet over high heat. Cook 4 patties until browned ⏱️ 2 minutes per side, then transfer to a plate. Cook remaining patties ⏱️ 2 minutes until bottom is browned. Flip, top each with cheddar cheese , and stack cooked patties on top. Cook until bottom patties are done and cheese melts ⏱️ 2 minutes .

    Split brioche buns in half and spread sauce on top halves. Place stacked patties on bottom halves. Top with tomato, sliced onion, and dill pickle. Serve with sweet potato wedges and extra sauce on the side.
