    In a small pot , bring water and chicken stock concentrate to a simmer over medium heat. Once simmering, stir in crushed tomatoes to combine. Keep warm.

    Wash and dry all produce. Halve, peel, and finely dice yellow onion . Finely chop parsley . Remove sweet italian pork sausage from casings.

    Heat ½ tbsp butter in a large pan over medium heat. Add the diced onion and cook, tossing ⏱️ 3 minutes , until softened. Add the sausage to the pan and cook, breaking up the meat into pieces, until browned and cooked through.

    Add arborio rice to the pan and toss to combine. Cook, stirring ⏱️ 2 minutes , until the rice is translucent around the edges.

    Begin adding the warm stock mixture to the pan in ½ cup increments, stirring between each addition, until absorbed. Repeat until the rice is al dente and a loose sauce has formed ⏱️ 25 minutes .

    Stir in parmesan cheese and season generously with salt and pepper . Finish with the remaining pat of butter and a sprinkle of parsley. Serve immediately.
