    Wash and dry all produce. Peel and cut potatoes into bite-sized pieces. Dice mini cucumber and apple . Toss chicken wings with cornstarch , salt , and black pepper .

    Heat a large drizzle of cooking oil in a large pan over medium-high heat. Add chicken wings in a single layer and cook, turning occasionally, until crispy and cooked through ⏱️ 15 minutes . Transfer to a plate.

    Heat a large drizzle of cooking oil in a second large pan , preferably nonstick, over medium-high heat. Add garlic chicken gyoza dumplings , flat sides down, and ⅓ cup water (be careful of splatter!). Cover and bring to a boil. Reduce heat to medium and cook until water has evaporated and bottoms are crispy ⏱️ 6 minutes .

    While dumplings cook, in a medium bowl , combine honey , half the soy sauce , butter , and sugar . Microwave in ⏱️ 30 seconds increments, stirring in between, until butter has melted and sauce is smooth. Stir in garlic powder and as many korean chili flakes as you like.

    Once potatoes have cooled, roughly mash with a fork, leaving some small chunks. In a large bowl, combine mashed potatoes, rice wine vinegar , mayonnaise , diced apple, diced cucumber, pepitas , golden raisins , and remaining soy sauce. Season with salt and black pepper to taste.

    Divide chicken wings, potato salad, and dumplings between plates. Serve with dipping sauce and kimchi on the side. Sprinkle with sesame seeds if desired.
