    small pot over medium-high heat. Add a drizzle of cooking oil . Add white rice and a pinch of salt ; toast, stirring frequently, until fragrant ⏱️ 2 minutes .

    medium pot dry over medium-high heat. Add bacon ; cook, turning occasionally and adjusting heat if browning too quickly, until crispy ⏱️ 8 minutes .

    While bacon cooks, wash and dry green bell pepper , tomato , and scallions .

    In pot used for bacon, heat 2 TBSP reserved bacon fat over medium heat. If your bacon did not render enough fat, use oil or butter instead.

    Add tomato paste to pot with chopped veggies, kidney beans , celery salt , cumin , cajun spice blend , sugar , and black pepper . Cook, stirring, until combined and slightly darkened ⏱️ 2 minutes .
