    Place flour tortillas on a clean work surface. Fill one half of each with refried black beans ; top with pepper jack cheese . Fold tortillas in half and gently press down to create quesadillas.

    Heat cooking oil in a large pan over medium heat. Pan-fry quesadillas until golden and crisp ⏱️ 2 minutes per side. While quesadillas cook, wash and dry all produce.

    Gently massage somos mexican brown rice in package to separate grains. Partially open package to vent. Microwave until hot ⏱️ 1.5 minutes .

    In a medium bowl , combine buttermilk ranch dressing and sour cream . Add red cabbage and carrot mix and juice from half the lime . Season with salt , black pepper , and hot sauce to taste. Toss to coat.
