2Preheat oven to 425°F. Wash and dry all produce. Peel and quarter potatoes. Trim and cut broccoli into florets. Halve and thinly slice shallot. -
3In a large bowl , combine ground beef, panko breadcrumbs, half the sliced shallot, half the garlic powder, and water. Season generously with salt and black pepper. Mix until just combined. -
4Form mixture into two mini meatloaves. Place on one side of a lightly oiled baking sheet . Drizzle broccoli with half the cooking oil and season with salt and pepper. Place on the other side of the sheet. Bake until beef reaches 160°F internal temperature and broccoli is tender-crisp ⏱️ 20 minutes . -
5While everything roasts, strip thyme leaves from stems and finely chop. -
6Drain cooked potatoes. In a large pot , heat over low heat with remaining sour cream, remaining garlic powder, and butter. Mash until smooth and creamy. Season with salt and pepper. -
7In a medium pan , add beef demi-glace, remaining cooking oil, and remaining water. Heat over low, scraping up browned bits ⏱️ 2 minutes . Stir in chopped thyme. If necessary, reheat sauce over low heat until warmed through. Serve meatloaves with mashed potatoes, roasted broccoli, and drizzled sauce.
