    Wash and dry all produce. Dice tomato into ½-inch pieces. Trim and roughly chop scallions . Quarter lime .

    In a small bowl , combine the diced tomato, chopped scallions, and a big squeeze of lime juice. Season with salt and black pepper . Set aside.

    Heat a drizzle of cooking oil in a large pan over medium-high heat. Add ground beef and press into an even layer with a spatula. Cook, undisturbed, until browned on bottom ⏱️ 2 minutes .

    While the beef browns, in a second small bowl , combine sour cream , a squeeze of lime juice, and a pinch of salt and pepper. Add water a tsp at a time until the mixture reaches a drizzling consistency. Set aside.

    Break the beef into pieces, then stir in Southwest Spice Blend . Cook until fragrant ⏱️ 30 seconds .

    Add black beans with their liquid and Tex-Mex paste to the pan with the beef. Cook, stirring frequently, until the beef is cooked through and the mixture has thickened ⏱️ 2 minutes .
