2Adjust oven rack to the top position and preheat broiler to high. Wash and dry all produce. Cook bacon in a small skillet over medium heat until crispy, then drain on paper towels and crumble. Halve lemon and quarter tomato. -
3Place flatbreads dimpled sides down on a baking sheet . -
4Remove baking sheet from oven. Flip flatbreads dimpled sides up. Spread roasted onion & garlic spread evenly over each. Divide mozzarella cheese and tomato quarters over flatbreads. Broil until cheese is melted and bubbly ⏱️ 2 minutes . -
5Arrange baby lettuce on plates. Top with warm flatbreads, caesar dressing, and croutons. Grate parmesan cheese directly over everything. Serve with remaining lemon wedges on the side.
