    Wash and dry all produce. Peel and thinly slice beets and red onion . Finely chop fresh dill and fresh parsley .

    In a small saucepan , combine rice vinegar , water , sugar , salt , and turmeric . Bring to a gentle simmer ⏱️ 2 minutes . Remove from heat.

    Place sliced beets and onion in a heatproof bowl . Carefully pour the hot pickling liquid over them. Cover and let sit until cooled and quickly pickled ⏱️ 15 minutes .

    Heat olive oil in a skillet over medium heat. Cut ciabatta roll in half horizontally. Toast cut sides until golden and lightly crisp ⏱️ 1 minutes .
