    carrot Roughly chop peanuts . Halve, core, and thinly slice bell pepper into strips. Trim and remove strings from sugar snap peas . Peel and mince or grate fresh ginger and garlic .

    In a medium bowl , combine sesame dressing , sweet thai chili sauce , and set aside half of the mixture for later.

    Heat a large nonstick pan over medium-high heat. Add peanuts, sugar , and water . Cook, stirring often, until water has evaporated and peanuts are coated and lightly toasted ⏱️ 4 minutes . Turn off heat; transfer to a small bowl . Wipe out pan.

    Pat pork chops dry with paper towels. Season lightly with salt and black pepper . Heat a drizzle of cooking oil in pan over medium-high heat. Add pork; cook until browned and cooked through ⏱️ 5 minutes per side. Transfer to a cutting board to rest for at least ⏱️ 5 minutes .

    Heat a drizzle of oil in pan over medium-high heat; add carrot and bell pepper. Cook until softened ⏱️ 5 minutes . Add snap peas, ginger, and garlic. Cook until lightly browned and tender ⏱️ 3 minutes more. Stir in remaining dressing mixture and butter until combined. Season with salt and pepper to taste. Turn off heat.

    Thinly slice pork crosswise. Divide stir-fry and pork between plates. Top pork with sesame chili sauce. Garnish with candied peanuts and serve.
