    Adjust rack to top position and preheat oven to 425 degrees F. Wash and dry all produce.

    In a small bowl , combine smoky mustard , mayonnaise , crème fraîche , and half the chives .

    Pat sirloin steak dry with a paper towel and season all over with brown sugar bourbon seasoning . Place on a baking sheet and roast until desired doneness ⏱️ 20 minutes .

    While steak roasts, in a large bowl , combine tempura batter mix , ⅓ cup cold water, and salt . Whisk until smooth. If mixture seems too thick, add water 1 tbsp at a time until it reaches a pancake-batter-like consistency.

    Slice onion into ½-inch thick rings and separate. Heat a ⅓-inch layer of cooking oil in a large pan over medium-high heat.

    Dip onion rings into batter and carefully place in hot oil. Fry until golden and crisp ⏱️ 3 minutes per side. Remove with a slotted spoon and drain on a paper towel. Season immediately with salt.
