2Wash and dry all produce. Meanwhile, halve, peel, and thinly slice red onion . Core, seed, and thinly slice red bell pepper . Trim and quarter baby bok choy , then separate leaves. 4Heat a drizzle of olive oil in a large pan over medium-high heat. Add beef sirloin tips and toss until browned and cooked to desired doneness, ⏱️ 3 minutes . Remove from pan and set aside. -
5Heat another drizzle of olive oil in same pan over medium-high heat. Add red bell pepper and red onion. Cook, tossing, until just tender, ⏱️ 3 minutes . Add baby bok choy to pan and toss until tender, another ⏱️ 2 minutes . If veggies won’t soften, add a splash of water. Season with salt and pepper. -
6Return beef sirloin tips to pan and toss to heat through. Serve stir-fry on a bed of jasmine rice.
