    Wash and dry all produce.

    Open package of chopped chicken breast and drain off any excess liquid. Toss with fry seasoning and set aside.

    Place flour tortillas on a clean work surface. Sprinkle half of each tortilla with one-quarter of the mozzarella cheese . Top with chicken, finely sliced shallot , bbq sauce , and half the cilantro . Sprinkle with remaining mozzarella. Fold tortillas in half to create quesadillas.

    Heat a large pan over medium heat. Cook quesadillas, flipping once, until tortillas are golden brown and cheese is melted ⏱️ 4 minutes . Cut quesadillas into wedges. Serve immediately with smoky red pepper crema and remaining cilantro.
