    In a small pot , combine white rice , water , and a pinch of salt . Bring to a boil, then cover and reduce heat to low. Cook until rice is tender ⏱️ 15 minutes .

    While rice cooks, wash and dry all produce.

    Heat a large pan over medium-high heat. Add peanuts and cook, stirring occasionally, until golden and fragrant ⏱️ 1 minutes . Transfer to a plate.

    Heat cooking oil in the same pan over medium-high heat. Add green bell pepper and onion . Cook, stirring occasionally, until browned and tender ⏱️ 6 minutes . Season with salt and black pepper .

    Meanwhile, in a small bowl , combine sweet thai chili sauce , sweet soy glaze , water{¼%cup}, and sugar . Stir until smooth.

    Heat butter and a drizzle of cooking oil in the pan over medium-high heat. Add grilling cheese and cook, turning occasionally, until browned ⏱️ 2 minutes . Do not worry if cheese begins to stick; use a spatula to scrape cheese from the bottom of the pan and separate cubes.
